Teochew Stir Fried Seafood Vermicelli Noodles

This plain vermicelli noodles with seafood is light and delicious. 




Ingredients:

300 grams of dried vermicelli, soak in the cold water
400 grams of fresh la la clams
300 grams of cuttlefish 
6 cloves of garlic, chopped into small pieces
2 chillies, cut into small pieces
5 stalks of coriander, chopped finely
5 stalks of Chye Sim (optional), boil with salt water until well-cooked
1 tablespoon of salt


Cooking methods:

1. Remove the ink part of cuttlefish, push the cuttlefish head into the stomach part of cuttlefish, sprinkle with 1 tablespoon of salt on the top of the cuttlefish before steaming. Then, steam the cuttlefish for 8 minutes. Set the cuttlefish stock aside for the vermicelli noodle into a small bowl.

2. Soak the fresh la la clams with salt water for 30 minutes until the sand particles removed from the la la clams. Then set up small fire, fry the chopped garlic and the chopped chillies. When the chopped garlic browned and the chopped chillies slightly wilted, put the la la clams inside the wok and cook the clams until the clam shells are opened. Set the la la clam stock aside for the vermicelli noodle into a small bowl.

3. Cut the cuttlefish into rings. Heat up the wok, put 3 tablespoons of oil. Fry the chopped garlic and chopped chillies, put the vermicelli noodles and spread the vermicelli inside the wok and flip over until the vermicelli noodles become slightly browned. Spread the la la clams stock and cuttlefish stock onto the vermicelli noodles, let the vermicelli noodles boiled. Once the vermicelli noodles become almost dried, put in the finely chopped coriander, put the cuttlefish pieces, and put the la la clams. 

4. Stir the vermicelli noodles for a while. Then serve with boiled chye sim and chopped chillies.
