Scrambled Eggs with Chives and Prawns


This simple meal is very delicious and easy to make, which is the reason why this dish is one of the most popular choices for home meal dish.



Ingredients:
3 eggs
1 tablespoon of Fish Sauce
2 tablespoons of Light Soy Sauce
A pinch of White Pepper
3 teaspoons of Shaoxing Wine
200 grams of chives, chopped into small pieces
3-4 prawns, cut into small pieces

Prawn marinate ingredients:
2 teaspoons of Shaoxing Wine
2 teaspoons of Light Soy Sauce
A pinch of White Pepper

1. Put the cut prawn pieces into the bowl. Add Shaoxing wine, light soy sauce, and white pepper then mix well together with the cut prawn pieces. Chill in the refrigerator and marinate for 15-20 minutes.

2. Crack the eggs into the bowl. Add fish sauce, light soy sauce, white pepper, Shaoxing wine. Whisk the eggs together with the seasonings well until bubbly. Add chopped chives into the egg mixture.

3. Heat the wok, put 1 tablespoon of oil and cook the prawns until the prawns omit fragrant smell. Set aside.

4. Put in the prawns inside the eggs and chives mixture.

5. Put 2 tablespoons of oil. Pour the eggs, chives, and cooked prawns mixture into the wok. Wait until the eggs becomes slightly firm, then scramble the eggs until cooked.

6. Serve warm
