Teochew style Stir Fried Green Beans with Olives

This Stir Fried Green Beans could be eaten with either porridge or rice.


I knew this dish for the fist time when I was looking for a recipe with green beans. Then I found this Stir Fried Green Beans with olives, I was lucky to find this recipe because there are plenty of green beans in where I live. When I cooked this dish, I fell in love with it especially with the preserved Chinese olives that complimented this dish.

This dish is originated from Chaozhou/Teochew (潮州) region of China. Olives are abundant at Chaozhou/Teochew, olives are either eaten raw or with porridge or used as one of the cooking ingredients. Preserved Olives is one of the olive products from Chaozhou/Teochew. Preserved olives has savory yet slightly sweet with a hint of licorice flavour and slightly bitter.




The original recipe uses ground pork, but I use chopped prawns instead.




Ingredients:

300 grams of green beans, cut into 2.5 cm length
1 tablespoon of fish sauce
1 tablespoon of Shaoxing wine
1 tablespoon of light soy sauce
3 teaspoons of sugar
A pinch of white pepper
1 teaspoon of minced ginger
3 cloves of chopped garlic
2 slices of dried chili, chopped (optional)
2-3 pieces prawns, peeled and chopped into small pieces
2 tablespoons of Chinese preserved olives (Kanna), chopped

Prawn marinate ingredients:
1 teaspoon of Shaoxing wine
1 teaspoon of light soy sauce
A pinch of white pepper

1. Marinate the prawns with Shaoxing wine, light soy sauce, and a pinch of white pepper. Then, wait until 15-20 minutes.

2. Heat the wok, put 1 tablespoon of oil. Put the green beans into the wok and stir until the beans becomes slightly transparent. Set aside.

3. Put 2 tablespoons of oil, put ginger, then garlic, fry them until the fragrant smell comes out.

4. Toss in the prawn pieces, cook until the prawn smell comes out.

5. Put in the green beans, stir, put in the sauces (fish sauce, light soy sauce, and Shaoxing wine), a pinch of pepper, and sugar.

6. Put a bit of water into the green beans to develop the flavour. Add in the chopped olives. Stir well.

7. Serve warm


Tips:
Pick the young green beans because young green beans could absorb the flavours better during the cooking process.

Don't forget to remove the beans vein on the sides of the beans before cut the beans into 2.5 cm length.
