Stir Fried Chicken with Ginger
The combination of the succulent chicken thighs with ginger is delicious and worth of trying.


400 grams of chicken things fillet, cut into bite sized pieces
2 cloves of garlic, grated
1 tablespoon of light soy sauce
A pinch of salt 1 tablespoon of oyster sauce
1/2 teaspoon of white pepper 1 tablespoon of Shaoxing wine
2 tablespoons of sliced ginger, cut into small strips
3 cloves of garlic, chopped into small pieces
1 tablespoon of cornstarch
2 red chillies, cut into small pieces
1 teaspoon of chicken stock powder, mix with a bit of water
Cooking Methods:
1. Season the chicken pieces with oyster sauce, Shaoxing wine, grated garlic, light soy sauce, white pepper, a pinch of salt, and cornstarch. Mix the chicken pieces together well with the seasonings and let the chicken pieces to be marinated for 3-4 hours.
2. Heat up the wok, put 1 tablespoon of oil inside the wok. Stir fry the ginger slices until the ginger slices become slightly golden brown in colour, remove the ginger slices from the wok and set aside.
3. Put 2 tablespoons of oil, put in the chopped garlic and the chopped chillies, stir fry the garlic and chilies until the garlic turns almost golden brown and the chilies omit fragrant smell. Put in the chicken slices inside the wok. Put in a bit of chicken stock which is mixed with a bit of water onto the chicken pieces. Stir fry the chicken pieces until become one-thirds cooked, put in the ginger slices, stir fry the chicken pieces until the chicken pieces become golden brown in colour.
4. Serve warm
